01 / ABOUT THE PLACE
Stepping past the noren in Shinbashi’s bustling business district leads into Tokuju, a long-established yakiniku restaurant known for female Kuroge Wagyu and carefully prepared Korean specialties. With comfortable table seating and private rooms, the subdued dining room accommodates solo diners on a quick lunch break as easily as colleagues meeting for an evening dinner.
The restaurant’s meat program centers on female Japanese Black cattle, prized for fat that melts at low temperatures and deep lean flavor. Core options range from signature short ribs (kalbi) to thick-cut lean beef finely scored in a lattice pattern (sudare-aburi jō-akasumi). Thinly sliced sirloin swirled through rich Nihon-ichi Kodawari brand egg yolk, scarce special-grade black tongue salted and grilled, and pristine beef offal such as upper rumen (jō-mino) and shimachō round out the grill options. Connoisseurs also appreciate the presence of certified raw beef items—including Kuroge Wagyu yukhoe (seasoned raw beef) and wagyu nigiri sushi—handled in dedicated facilities officially permitted by the public health center.
Midday crowds gravitate toward dependable lunch combinations featuring A4 and A5 grade beef, such as the Wagyu Kalbi Lunch and the Three-Cut Yakisuki Lunch. For diners wishing to steer clear of grill smoke, comforting soups and noodle options provide a flavorful alternative: homemade tofu jjigae prepared from the house’s founding recipe, offal jjigae infused with house-blended chili miso, and generous bowls of yukgaejang noodles. Thoughtfully prepared side dishes, including kimchi and clear soup, ensure a well-balanced meal during limited lunch hours.
Evening dining calls for a slower pace over drinks such as beer and wine paired with assorted grilled cuts, making reservations advisable for dinner. For dining at home or at the office, Tokuju also prepares premium yakiniku bento boxes neatly layered with Kuroge Wagyu kalbi or loin.
